The biggest issue facing the production of traditional livan cheese, as stated by the cheese producers themselves, is the sales problematics. Small producers have not been able to secure a legal sale of livan cheese and thus are supplementing it with irregular sales and trading with traffickers who try to sell the product in Croatia by illegally transporting it across the border. In effect, the producer only receives a small fraction of the sale and is exposed to high risk from customs officer at the border. The aim of the project is to introduce the traditional livan cheese to the official market. Currently, small producers are not able to secure adequate conditions which would allow them to register the product and legally distribute it. The project focuses on improving the milk and cheese quality and, simultaneously, introduce HACCP (Hazard Analysis and Critical Control Points) system. Further, the project aims to create an agricultural team whose task would be to secure the legal distribution of cheese. The project had also delivered small farming equipment and organized series of training sessions in relation to the HACCP system implementation.
